White Chocolate Mousse Cake
This is one of my favorite cake recipes ever. My husband’s birthday is today so I made this little cake to celebrate (happy birthday, honey!).
180g of Digestive cookies (or any oat cookies)
75g of butter
200g of white chocolate
200g of cream cheese
2,5 dl of whipping cream
2 tbsp of lime or lemon juice
2 gelatin leaves
Vanilla to taste
Blueberries for decorating (optional)
This recipe is for cake pans that are 20-24cm diameter. Melt the butter and crush the cookies. Mix the butter and the crushed cookies. Add baking paper to the bottom of the cake pan and spread the butter and cookie mixture evenly in the pan. But the pan in the fridge.
Put the gelatin leaves in cold water to soften. Melt the chocolate in the microwave oven. Mix the melted chocolate and the cream cheese together. Heat the juice and mix in the gelatin leaves. Add the juice and gelatin mixture to the chocolate and cream cheese. Whip the cream and add the vanilla to the cream. Mix the cream and chocolate-cream cheese mixture together. Pour to the pan and put in the fridge for at least 4 hours before eating. Enjoy!
